Austrian Cheese Cake

Ingredients:

4 Eggs

2 Tbsp Coconut flour

500 g Ricotta (or Quark)

1 Tbsp Stevia

1 tsp Vanilla

Zest of 1 Lemon

3/4 to 1 cup of blueberries (or any berries)

Method:

Blend the egg yolks with coconut flour, Ricotta, Stevia, Vanilla and Lemon. Whisk the egg whites. Fold egg whites under the batter, pour into flan dish or any baking dish, top with blueberries and bake at 180 C for 35 to 45 minutes (depending on the size of your dish) until cooked through. (skewer inserted in the middle comes out clean)

You can omit the blueberries and mix a hand full of raisins or cut up apples into the batter instead.
